It is not designed for direct food measurements. Attach the probe to an oven rack or grill grate exactly where you need it. The probe's sensor can handle temperatures up to 752°F and the cable can handle temperatures up to 662°F. That being said, I want you to be aware of one common occasion. When you're searing and don't have a deflector shield in, there could be a small flare up from the meat juices and reach temperatures well above 1000°F. Put your probe in a safe position where it won't be damaged if this does happen.
The temperature sensor is at the very tip of the probe. You can put the grate clip further down the probe.
This probe was specifically designed to take air temperature. While it will read accurately in meat, the probe is smaller and has a blunted tip so you would have a hard time inserting it into the proper location to get correct temperatures. Especially if you are cooking a large cut of meat.

No, this wouldn't be the right solution, as propane flames can easily exceed the top range of the probe and cable (662°F). An infrared thermometer is the best solution for determining the surface temperature of your grill. If your grill has slots in it, place a cast iron frying pan on top of the grill (with no oil in it) and use the infrared thermometer to determine the temperature of the pan. If the grill is flat, you can point the infrared thermometer directly at the grill top.
