Every bit as good as the usual probes.
I bought these on an open box special.. What a bargain! These are the thinner probes for delicate meats. When tested on a drywell thermometer calibrator they were on the money. Have not used them on a cook yet but am certain they will perform well.

I didn’t realize that it’s a needle probe.
Like all Thermoworks products, this is a quality item and it was shipped quickly and at a reasonable cost. However, I guess I didn’t read the item description carefully. I needed a probe for cooking baby back ribs, i.e., a VERY short probe. However it seems that unless a needle probe is fully inserted to the hub it does not read the temperature accurately and even this short probe is too long for BB ribs when it is inserted full length. I was hoping for a regular “tip end” reading probe. Could this probe be bent to follow the curve or the ribs? Who knows?
